Ingredients

  • 20 Elderflower Heads
  • 2 Lemons
  • 1 Orange
  • 1kg White Sugar

Method

Start with some fun foraging and find 20 elderflower heads. Rinse and place in a large bowl, pour over 1 full boiled kettle of water.
Grate the zest of two lemons and one orange into the hot elderflower water. Keep the fruits in the fridge to use the next day. Leave the mix overnight.
Pour mix through a cloth (an old tea towel is fine) into a large saucepan.
Add 1kg bag of white sugar and the juice from the fruits. Heat the mix gently until the sugar has dissolved and the pan is lightly bubbling. Allow to cool a little.
Wash some empty glass bottles and sterilise them by putting them in the oven at 160C for 10 minutes. Carefully pour the cordial into the bottles. Seal the bottles with clean lids and leave to cool.
