Pam's "If It's" Pie

This pie uses any 'if it's' there in the fridge ingredients. it is a means of using up our leftovers and reducing food waste!


Ingredients

  • 80g Butter
  • 20g Vegetable Fat
  • 300g Plain Flour
  • Enough water or milk to bind the pastry dough together, add slowly with caution not to over-wet.
  • Filling - can be anything, but I have used finely chopped potato, corgette, cheese, and garlic. I have added a splash of leftover cream.

Method

Cut the fats into small cubes and rub it into the flour until it's like breadcrumbs. Bind with the chosen liquid (enough to create a dough-like ball.)
Put into the fridge and leave to stiffen.
Roll out half the pastry and place in a lightly greased pie dish.
Add the filling and cover with a pastry top, brush with milk or egg.
Place in the oven at 170C/160C (fan) and wait until golden and crisp (approx. 45-50 mins.)
